## The dial

Zero is burrs touching, plus one click. Fully open is 41.

**The steps are not linear.** One click in the espresso range is a large change. One click in the press
range is barely perceptible. Move one click at a time below 12 and two or three at a time above 28.

## Adjust by taste, not by number

- **Sour, thin, salty, finishes fast** → under-extracted → **finer**.
- **Bitter, dry, hollow** → over-extracted → **coarser**.
- **Balanced but weak** → the ratio is wrong, not the grind. Use more coffee.

## As a bag ages

Coffee that tasted right at day 7 often tastes thin at day 25. Older coffee wants a finer grind. Go one
step finer in the third week before concluding the bag is done.

## Retention

About **0.4 g** when single-dosing. Not zero. A knock on the body in the last second of the grind recovers
most of it.

## If the numbers stop making sense

If you cannot reach espresso fineness at click 1, or the burrs chirp before click 3, the grinder needs
recalibrating. Do not force it — running burrs into contact dulls them in seconds and that damage is not
covered by warranty.
