## What is in the box

The selection rotates with the season. A typical flight:

## Brew them the same way, at least once

The point of a flight is comparison, and comparison needs one variable. Brew all four with the same
recipe first, then adjust per coffee.

**Baseline recipe:** 22 g coffee · 350 g water at 95 °C · medium grind · 3:00 total.
Bloom 45 g to 0:40, then pour to 175 g, 265 g, 350 g.

115 g gives you roughly **five brews** at this dose, which is enough to get one wrong and still learn
something.

## How to taste

1. **Smell the dry grounds** before you add water. Half of what you will taste is here.
2. **Smell the bloom** at 0:30.
3. **Taste it hot, then taste it again at room temperature.** Most of the fruit and floral character
   appears as it cools. A coffee that is interesting cold is a good coffee.
4. **Write one word down** for each. Not a professional descriptor — whatever it actually reminds you of.

Do not brew all four in one sitting. Your palate will be finished by the third.
