Nightshift Decaf and **Huila Reserve — Colombia** are the **only two** Emberlane coffees that carry USDA
Organic certification. No other coffee in our range is certified organic, and we do not describe any other
coffee as organic.

## What "99.9% caffeine free" means precisely

The Swiss Water Process removes 99.9% of the caffeine present in the green coffee. It does **not** produce
caffeine-free coffee.

If you are avoiding caffeine on medical advice, talk to your clinician. We will not tell you this coffee
is caffeine-free, because it is not.

## How Swiss Water Process works

1. Green coffee is soaked in water to draw out caffeine and flavour compounds.
2. That water is passed through a carbon filter sized to capture caffeine molecules and pass the larger
   flavour compounds.
3. The resulting caffeine-free, flavour-saturated water — Green Coffee Extract — is used to soak the next
   batch. Because the water is already saturated with flavour, only caffeine migrates out.
4. The process runs until 99.9% of the caffeine is gone.

**No methylene chloride. No ethyl acetate. No supercritical CO₂.** Water and time only.

Decaffeination happens on green coffee, before it reaches us. We roast it in Bellingham on the same
schedule as everything else.

## Allergens and processing

Roasted on shared equipment with all other Emberlane coffees. No nuts, dairy, or gluten-containing
ingredients are used anywhere in the roastery, and we add nothing to any coffee — **we do not make
flavoured coffee**. Tasting notes describe what the coffee tastes like, not something added to it.
