## Recipes

### Flat-bottom pour-over (Halcyon)

30 g coffee · 480 g water at **94 °C (201 °F)** · **medium-fine** grind · **3:00** total
Bloom 60 g to 0:40, then pour to 240 g, 360 g, and 480 g.

### Espresso

18 g in, 36 g out, 27 s, 93 °C. Decaf pulls faster than caffeinated coffee at the same setting — expect to
go 1–2 clicks finer than your Forte setting.

### French press

60 g · 900 g at 92 °C · coarse, one step coarser than you would use for caffeinated coffee · 4:00.

## Why it brews differently

Decaffeinated beans are more porous than caffeinated ones — the process opens the cell structure. In
practice that means:

- It extracts **faster** at the same grind setting.
- It goes from correct to bitter more quickly, so watch the tail of the brew.
- **If it tastes thin, go one step finer before changing anything else.**

## Adjusting

## About the decaffeination

Swiss Water Process: green coffee is soaked in water saturated with coffee solubles, so caffeine leaves
and flavour stays. **No chemical solvents are used at any stage.**

Residual caffeine: **0.1% or less — 99.9% caffeine free.** Not zero. A cup contains roughly 2–5 mg of
caffeine, against 95–165 mg for a caffeinated cup of the same size.

## Why our decaf is not stale

Most decaf is bad because it is old and roasted dark to hide it. Ours is a single Huila lot roasted to the
same medium profile as the caffeinated coffees, on the same **Monday and Thursday** schedule, and stamped
with the same roast date. Best within **4 weeks**.
