## Recipes

### Flat-bottom pour-over (Halcyon)

30 g coffee · 480 g water at **94 °C (201 °F)** · medium grind · **3:30** total
Bloom 60 g to 0:45, then pour to 240 g, 360 g, and 480 g.

### French press

60 g coffee · 900 g water at 93 °C · coarse grind · 4:00, skim the crust, decant immediately.

### Drip machine

60 g per litre. Medium grind. Fill the basket level.

### Espresso

Workable but not what it is roasted for. 18 g in, 36 g out, 28 s, at 93 °C. Use Forte Espresso instead if
espresso is your main method.

## Why it is forgiving

Three origins blended **after** roasting, so each component gets the roast profile it wants. The Brazilian
carries body, Colombia carries sweetness, and a small share of washed Guatemalan keeps the finish from
going flat. A 30-second swing in brew time moves the cup without breaking it.

## Adjusting

| Bitter, drying | Grind coarser, or drop to 93 °C |
| Balanced but weak | Use more coffee — 33 g instead of 30 g |
| Flat and papery | Check the roast date. Best within 4 weeks. |

## Freshness

The roast date is printed on the bag. Best within **4 weeks** of that date; sealed, it keeps about
12 months but will taste flat long before then. Buy whole bean if you own a grinder.

## Storage

Cool, dark, dry, bag rolled down and the tin tie closed. Do not freeze an opened bag.
