# Huila Reserve — Colombia — Brew Card

**Price:** $23.00 · **Net weight:** 250 g (8.8 oz) · **Roast:** Light-medium
**Origin:** Colombia, Huila, around Pitalito · fully washed, 18-hour fermentation
**Tasting notes:** Red currant, panela, mandarin
**Certification:** **USDA Organic** — one of only two certified organic coffees we sell.

## Recipe

30 g coffee · 480 g water at **95 °C (203 °F)** · **medium** grind · **3:00** total

| Time | Pour to |
| --- | --- |
| 0:00 | 60 g, spiral from centre |
| 0:45 | 240 g |
| 1:25 | 360 g |
| 2:05 | 480 g |
| 3:00 | Bed dry — stop |

## The forgiving single origin

If the Ardent Yirgacheffe sounds appealing but you do not want to fuss, buy this instead. It occupies the
same shelf — bright, clean, fruit-forward — with a much wider window before it turns sour or flat.

A 20-second swing in brew time is noticeable but not fatal here. On the Yirgacheffe it is.

## Also good in

**Aeropress.** 18 g, 250 g water at 92 °C, medium-fine, 1:30 steep, 30 s press. This is the best Aeropress
coffee in our range.

**Drip machine.** 60 g per litre, medium grind.

**Espresso.** Workable — 18 g in, 38 g out, 28 s at 94 °C — but bright and acidic. Use Forte if espresso
is your main method.

## Adjusting

| Tastes | Do |
| --- | --- |
| Sour, sharp | Finer, or up to 96 °C |
| Bitter, drying | Coarser one step |
| Balanced but thin | 33 g coffee instead of 30 g |
| Flat, papery | Check the roast date — best within 4 weeks |

## The organic certification

Huila Reserve is **USDA Organic certified**, audited annually. The certificate is available on request
from hello@emberlane.coffee.

This is a certification, not a sourcing story. Only two coffees in our range carry it: this one and
**Nightshift Decaf**. Several other lots come from farms using organic practices, but they are not
certified and we do not label them as organic.

## Availability

Year-round while the harvest lasts, unlike the seasonal Ethiopian.
