# Halcyon Pour-Over Brewer — Recipe Card

## The house recipe

30 g coffee · 480 g water at **94 °C (201 °F)** · medium grind · **3:30** total

Rinse the paper with hot water for about ten seconds first — it seats the filter and warms the ceramic.
Ten seconds is enough; a long rinse cools the water you are about to brew with.

Maximum useful batch is 600 ml — the carafe capacity. Above that the bed gets too deep and extraction goes
uneven.

## Why flat-bottom

A cone rewards a good pour and punishes a bad one. A flat bottom mostly does not care: the bed levels
itself, extraction evens out, and the same recipe works whether you pour beautifully or not.

That is why it is the brewer we hand to someone making their first pour-over.

## Filters

Standard **155-size flat-bottom** papers. Ours are **$9.00 for 100**. Kalita Wave 155 filters also fit.

## Reading the result

## Care

Both parts are **dishwasher-safe**. Rinse the dripper straight after brewing — dried coffee oil in the
glaze pores is what makes an old dripper smell.

Do not put the ceramic dripper on a hot stovetop or into a hot oven. Thermal shock cracks it, and that is
not a defect.

**Drop breakage is not covered by the warranty.** It is the one failure mode we actually see. Replacement
