# Blackpine — Sumatra Gayo — Brew Card

## Recipe — French press (best method)

60 g coffee · 900 g water at **93 °C (199 °F)** · **coarse** grind · **4:00**

1. Pour all the water at once. Start the timer.
2. At 4:00 break the crust and skim the foam and floating grounds off.
3. Press slowly, about 15 seconds.
4. **Decant immediately.** Left on the grounds it turns bitter within minutes.

## Recipe — pour-over

30 g · 480 g at 93 °C · medium-coarse · 3:45 total. Good, but the press is better — this coffee is about
body, and paper strips it.

## Recipe — moka pot

Fine, not espresso. Fill the basket level without tamping, hot water in the base, off the heat when it
hisses. Blackpine and Forte are the two coffees we would put in a moka pot.

## The dark roast for people who do not like dark roasts

Wet-hulling is what makes Sumatran coffee taste Sumatran: low acidity, syrupy body, a savoury edge.
Roasted too far it becomes ash. We stop just before second crack settles, which keeps the fig sweetness in
the cup and leaves **no oil on the bean surface**.

If your dark roast beans look shiny, they were taken further than this.

## Adjusting

## Not recommended for

**Espresso.** It will work and it will be heavy and roasty. Forte is the espresso coffee.

## Cleaning matters more with this coffee

Dark roasts leave more oil. Old coffee oil in a press mesh will make every brew afterwards taste rancid,
and it is the cause of almost every "my press coffee tastes wrong" email we get. Take the filter assembly
apart weekly.

## Freshness

Roast date on the bag. Best within **4 weeks**. Dark roasts stale slightly faster than light ones because
the oil is closer to the surface.
