30 g coffee · 500 g water at **96 °C (205 °F)** · **medium-fine** grind · **2:45** total

Rinse the paper for ten seconds first. Grind immediately before brewing.

## This is the fussiest coffee we sell

It is a light roast, and light roasts want **hotter water and a finer grind than people expect**.

- **Too coarse or too cool → it tastes like tea.** Thin, watery, vaguely floral, no sweetness. This is by
  far the most common failure.
- **Too fine → the florals turn soapy** and the finish goes drying.

Start at 96 °C and one step finer than your usual pour-over setting. If your kettle does not hold
temperature, use it straight off the boil.

## Adjusting

| Sour, sharp | Finer. Sourness in a light roast is under-extraction, not acidity |
| Soapy, perfumed, drying | Coarser one step |
| Balanced but faint | 32 g coffee instead of 30 g |

## Do not use it for

**Espresso** — it is roasted far too light and will pull sour at any ratio you can reach.
**French press** — the florals are lost in the body. Use Blackpine instead.

## Why the bag is 250 g

Single origins cost more per gram and we would rather you finished the bag inside the four-week freshness
window than admired the last third of it in week seven. Blends come in 340 g.

## Seasonality

This is a single lot. When it is gone we do not substitute a similar Ethiopian and keep selling it under
the same name. The next Ardent will be a different coffee with a different card.
